Grilled Eggplant, Fresh Mozzarella & Balsomic Glaze
12 slices of eggplant about 1/4 inch thick
Salt
Freshly ground black pepper
Virgin Olive Oil
12 slices of fresh mozzarella
Fresh basil leaves
1/4 cup balsamic glaze, (recipe in archives)


Preheat the grill. Brush both sides of the eggplant with virgin olive oil. Season with salt and pepper. Grill the eggplant for 2 minutes on each side.

Put the eggplant on a plate, Lay a slice of fresh mozzarella & basil on top. Drizzle the balsomic glaze over the whole plate
