Fresh Roasted Peppers
3 red peppers
3 yellow peppers
3 orange peppers
Virgin olive oil
Fresh Chopped Basil & Parsley
3 Cloves of garlic sliced thinly
Salt and pepper


Roast peppers by placing them on an open flame. Broiler or even BBQ grill. Make sure to turn peppers to char evenly. When pepper skin is black, remove peppers from flame. Place them on baking sheet and Cover with plastic wrap. Let the peppers cool down for 1/2 an hour.

When peppers cool down to touch, peel off black skin & remove the seeds. Cut the peppers into slices. Put peppers in a clean bowl and add generous amount of olive oil, Garlic, Chopped basil & parsley. Season with salt and pepper to taste. Chill and serve with Italian bread.
